When you install the program "Light" it will somehow disable YouTube on a 1.1.1 iPhone. I went over this like 4 times and it does somehow create an issue that will not allow YouTube to connect to the server. I un-installed it and everything works!

So if anyone has trouble connecting to YouTube and has "Light" installed, remove it and all should work.
