Firstly man, I think you'll find its called the springboard. Summerboard is a program that lets you set a theme to your phone.
Second, Customize hasn't worked to hide apps since 1.1.2. You have to use poof to hide them.
Thirdly, I think the best way to do what your wanting is to take one of your existing programs (maybe vWallpaper) and give it a blank icon. Then move all your apps to another page and have vWallpaper on the screen where your wallpaper is showing off. Then when you want to change it, you just click the spot where your icon for vWallpaper would usually be.
The icon lable will still be there, but you can use Summerboard to hide the icon labels.
