Instead of going to var/root/Library/Summerboard, i tried going to var/mobile/Library/Summerboard/Themes to upload your own themes. Just sharing a thought because all the tutorials point to the first path. If you have problems with summerboard themes not showing up, try going to the second path. Works wonders for me.

just an fyi. the actual location is /var at the root directory is a link to /private/var

/private/var/mobile/Library/Summerboard/Themes
