if I have movies on my computer (NOT in iTunes, on the computer itself), is there a way to get them into iTunes and onto my iPhone?

Go to "Movies" in iTunes.
File > Add File to Library
Add the Movie/Video to Library
Sync..

Before adding your movies to iTunes and then to the iPhone, you must convert the file to .mp4 format. There are many free and inexpensive programs out there that would convert any movie file to mp4. I personally use AOA MP4 Converter from AOA Media. Go to DVD to AVI, iPod Video Converter, DVD Creator, DVD Ripper for more information.
