Your most used/useful application
Let's have a thread talking about the applications we use the most day to day. Please exclude the more obvious stuff like Finder, internet, mail and iTunes. Let's try to focus on 3rd party apps that probably didn't come with the computer that you find to be very useful or fun and that you use on a regular basis.
I find that Evernote is a great little tool to have. It is very versatile and now that there's an iPhone version I use it regularly.
What about you guys?

I didn't think so many people would talk about photo editing software. I'm a Photoshop man myself and absolutely love it but just don't need to use it that often. I tried the Aperture trial but just couldn't get into it like I could Photoshop.

Macromedia (Adobe I suppose now :/) Flash CS3 is the tool of choice for me. I animate cartoons and create my themes via that wonderful program.
