I'm slowly listing them as I go in this forum, but off the top of my head with no links, screen shots, or information (not how I like to do it) I'd say one of the better unknowns is "safari speed". It'll put the juice in your browser.

My Must Haves:
Little Snitch (keep the internet safe from me)
LaunchBar (I never go looking for applications... ever)
Oynx (cleans up my system all the time)
iStat Menu Bar (Keeps me apprised of what's going on)
MailTags (Adds tagging, projects, keywords, and lots of other things to Apple Mail)
Mail Act-On (Adds 1 keystroke actions to Apple Mail)
1Password (I never create or remember passwords anymore with this)
SuperDuper! (Best free backup and drive migration tool out there!)
TimeMachineEditor (The only way to set Time Machine to backup on YOUR schedule)
Cool Apps:
Handbrake (Free Ripping of 99% of DVDs & AVI/Other files to Quicktime/iTunes)
HyperEdit (best quick and dirty web editor out there!)
Notebook (Never found a better way to organize random notes)
ReceiptWallet (Scan all your documents & receipts and toss the originals in the shredder, no more file cabinet!)
WhatSize (find out what's eating all that hard drive space without drilling through 50 folders)
