Is 5.0.1 or 5.1 better?
This is the issues I'm having. I'm jailbroken on 5.1 and there's so many bugs and all of the themes I use aren't working. Camera and photos won't theme at all and everytime I open apps they always crash. Themeitapp won't open which is getting annoying. Should I downgrade to 5.0.1 or stay on 5.1 or just a do simple restore and there's a possibility that the untethered jailbreak might be released. Should I downgrade or not?

If you can, downgrade. You'll have an untethered jailbreak and the camera app will theme.

So if I downgrade from 5.1 to 5.0.1 will iCloud sync all my backups from 5.1 to 5.0.1?

Not all of it. Just some app data, photos, emails, notes, contacts and a few more.

It's not bugs that are affecting your iPhone, it's the newer software. Many Cydia apps don't work with new versions of software, you have to wait for updates by the developer. I want to upgrade to 5.1 because the battery is horrible on 5.0.1. However, there is no untethered JB yet for 5.1.

The only difference between 5.1 and 5.0.1 is really the battery and some camera addons. Other than that it's almost pointless...

Well I downgraded and it was succesfull. I was really confused about how my location was already set on Taiwan and I'm a little mad that iCloud won't sync anything that I saved from 5.1.

Did you create a backup in iTunes though, perhaps the backup can be reloaded better via iTunes if iCloud isn't working properly for you.

I know iTunes doesn't allow you to load a newer iOS backup to an older one, but I would imagine the difference would have to be greater (like iOS 5 backup to iOS 4 or iOS 4 backup to iOS 3)... I wouldn't think 5.1 and 5.0.1 would cause a problem with loading a backup. Are you getting some sort of error?

iTunes says that it can't restore data because software version is too old. Can you answer my question on why the language and location is set on Chinese and the location is set on Taiwan?

Hm, I guess 5.1 backups won't work with 5.0.1 then, iCloud or iTunes. Sorry, I don't know why your location was set to Taiwan or why the language is in Chinese. I mean, is it an iPhone from Taiwan so it defaulted?

Well I think I might be over thinking this but could this happen at all? Could there ever be a firmware with a keylogger sending private information back or could there be a virus or something? Something I've always wondered.

Everything's possible. That could happen I would guess...
