Downgrade back to 4.3.3? (I have my SHSH blob saved)
OR
Jailbreak iOS 5.0 and use semi-tether
OR
just wait till an untethered jailbreak comes out for 5.0. I'm really missing my jailbreak. I guess I could wait but I have no idea on how long till an untethered jailbreak is released.

I would wait. Right now there is no way to get back to 5.0. You would have to restore to 5.0.1 since 5.0 is not being signed anymore.

5.0 Apple changed the way SHSH blobs are done and checked. They are randomly generated upon each boot. Check out Dev Team Blog for more reasoning behind it.

So your saved ones mean nothing right now because they cannot be used like how 4.x was.
