I have a iPod Touch 4th Gen. I want to upgrade it to iOS 5, but I'm on a 4.1 jailbroken firmware. I'm afraid I will lose important information. I want to back up my important stuff. such as Contacts, Notes, and specific non jailbroken apps. If I "back up" my iPod with itunes and when I upgrade to iOS 5, I restore it with the back up will it restore all the regular apps? or is there something I can do to backup specific apps? Once I do upgrade it I won't jailbreak it...for now, so AppBackup is out of the question.

You won't loose all your apps only by upgrading to iOS 5.
If you have installed ******* on your device you can transfer everything in iTunes.
With the upgrade you loose your jailbreak and cracked apps, but you can rejailbreak your iDevice in iOS 5 because a jailbreak for it is finally out. Then you have to install ******* for iOS 5 and sync your device with iTunes.
--> None of your applications are lost. Original or Cracked!
