i'm trying to reinstall 4.3.1 (official or jailbreak) because im stuck in DFU mode. after a complete restore, it is still in DFU mode.

Just update to 4.3.3. let iTunes download the firmware for you.

uhm the problem is, only the restore button is available. i can't access the update button.

So just restore then. iTunes will update and restore you to 4.3.3.
