Well, you could just jailbreak it on 2.2.1, but you would have to dig up an old version of redsn0w. That could be a little tough.

The next option would be to try to "shift+restore" it to 3.1.2. You would first have to download the iPod touch 2g 3.1.2 firmware which could be found here. Once you download that and attempt to install it, it may look like it won't restore. Hopefully you'll get to the point where the iPod actually has the little bar which indicates that it is restoring. IF you get that far, you will get an error at the end of the restore. (I think 1015) From there you will want to download TinyUmbrella and use this program to kick it out of recovery. This will make the iPod usable again. From here you will want to go to blackra1n.com and download that. With your device plugged in run blackra1n as administrator and click make it ra1n.

If that doesn't work you can just do a clean restore in iTunes to 4.2 or 4.2.1 and then jailbreak using the newest version of redsn0w. (0.9.6b4)

    Good luck!

I would just update it to 4.2.1 then use redsnow 0.9.6b6 to jailbreak it.
