Backing Up iPod Touch (pre-jailbreak)

I currently have my 2G iPod Touch wil a tethered jailbreak full of goodies (music, apps, video, and such) and I want to "upgrade" to the untethered jailbreak but i don't want to lose my stuff
is there anyway i can back up like my photos, music apps from the app store and cydia, and like everything else
like would copying it all via SSH work?

some might be... if you decide thats what you want to do

first... music, videos, appstore apps: all backed up on itunes (just do a sync) if you are using cracked apps.. haha

cydia apps: use apt backup

there is another alternative to using itunes, that is by sshing into var/mobile/library... copy everything to a folder on your desktop

after you do a restore and jailbreak.. go into the same directory and replace all the folders with yours

well i used apt backup and it only saved some of my apps but i saved just about everything else [:
