Currently, the second-generation iPod Touch cannot be jailbroken. So you can't even start this process. You'll have to hold on until the DevTeam announces if they've done so, in which they'll update QuickPwn to update the compatibility (but they're working more on the 3g unlock). For the iPhone, there's not much difference (from the user's standpoint) when using software to jailbreak (the only difference being using different files to start).
You're just going to have to deal with a bland iPod for now
