yeah you can downgrade.....no real reason why but you can like so:
1)connect iphone to itunes
2)enter DFU mode (sleep/awake + home for 10 seconds and then release sleep/awake and continue to hold home until itunes recognizes it)
3)Hold shift and select your firmware (2.0.1 in your case)
and it should restore to that firmware. and if that doesnt work, you can do it the hard way:
1)uninstall itunes 7.7 and instal 7.5
2)connect to itunes (it will tell you your ihone requires i higher version of itunes)
3)enter DFU mode
4)hold shift and click update
5)select firmware
6)restore to firmware
7)then update itunes again
again, there is no real point in downgrading your iphone (2.0.2) to 2.0.1

because for some reason when I'm using customize. I download a whole theme such as buff2 I apply it and everything works but the dock and wallpaper. Is there a way to fix this?

No, you dont want to downgrade.
Firmware 2.0.2 also upgrades your baseband. If you downgrade back to 2.0.1 like that you will end up with NO reception because firmware/baseband wont match anymore.

firmware 2.0.2 's baseband update is only for 3G phones and not for the classic iPhone.
