Is there a way I can just FTP or SSH my 1.1.3 touch without having to go through the ridiculously laborious task of jailbreaking? All I want is the Mobile Chat app which I have saved on my computer, but I don't want installer or any of that other crap. Anyone? Anyone?

nope.... but if you dont want al that "crap" then why are you on this site?? but to tell you the truth jailbreaking the phone is worth the 20 min it takes..
