Here's how you downgrade your iPod:
Download the firmware you want (search ModMyI. For example:
1.1.1 firmware. It should come up as a result on the downloads page)
Shift+Restore (the button found in iTunes, beneath Update/Check for updates).
Find the firmware you previously downloaded.
Let the iPod restore to that firmware.
OR you can just jailbreak it in 1.1.4, by either using ZiPhone (not recommended) or by using iLiberty+ (works on 1st try, usually).
Install iLiberty+ (Google Search it, you may be able to find it here)
Open iLiberty+ and then make sure the box by Jailbreak is checked. Also, if you want Installer installed, check the box by that.
Then hit the button "Do It" (or whatever it's called)
You now have a jailbroken iPod Touch.
Now if for some reason iLiberty+ doesn't work for you, or you just don't wanna use it, go to ziphone.org and download the latest version of it for Windows (This is all base on the fact that I believe that you are on a Windows OS, if not, get iNdependance for Mac (replacement for iLiberty+ or download the Mac version of ZiPhone). Right now the latest version is 3.0
Now open ZiPhone and hit "Jailbreak"
You now have a jailbroken iPod Touch.
