Known working apps on touch
Since the 1.1.1 firmware was unlocked I've noticed a lot of threads here and there making an attempt at listing apps that are compatible with the new firmware.
One of the main things I have noticed is that most, if not all, of these lists are being made by people with iPhones and then maybe being contributed to by people with touches.
The main problem with this is that i have noticed quite a few apps that supposedly work on 1.1.1 do not work on the touch.
Having said that, I decided to make a list of all the apps available through Installer.app and other sources that I have personaly tested on a touch.
Mail (from iPhone)
Calendar (from 1.0.2 iPhone)
--- Note: there is now a hack on Installer.app to fix this.
Weather (from iPhone)
Maps (from iPhone)
Notes (from iPhone)
Installer.app
Stumbler
Colluquy (text entry field is black, otherwise functions)
Terminal
BSD Subsystem
Summerboard (new alpha version for 1.1.1)
iSwitcher
iFlashCards
Touch Touch Revolution
Balls
Sudoku
Sketches (latest version)
MobileChat
Apollo
iLauncher
Dock - Basicly functioning, screenshot function not working.
Ants (sometimes the ants dont show up for awhile, maybe normal)
Here are a few that are reported to work on 1.1.1 and seem to be function on the iPhone, but did not work on my touch:
Customize (newest version) with rSBT included.
Customize (older version)
iPhoneDoom
PXL MobileSafari Plugin

Clarification needed?
To be precise, rSBT does NOT work in 1.1.1. There is (as you note in the line above) an alpha version included in Customize 1.1.1. It's important people can distinguish between the two, as they are different apps.
Unless you can point to someone having success with 1.1.1 + rSBT...

I actually meant the older version of Customize, not rSBT.
I've edited my above post to reflect this, I have seen it posted where people said disabling ssh or by other means they were able to get the older version of Customize to work, however even though it does "run" it most certainly does not work as intended.
On the other hand, the new Customize has basicly the same issues as far as functionality go, so it maybe just a difference between the iPhone and the touch.
