How to unlock or reset Passcode ?

How to unlock passcode without openSSH, and restoring?
I don't want to lose my notes :/

Cannot connect to iTunes unless I unlock the code first which I don't know
The iTouch is not in My Computer so I can't access the folders
WiFi is off
I'm at 1 hour disabled after that it will be connect to iTunes

Set it in DFU and restore. Google how to put into DFU if you don't know how.

Well how else are you gonna get access to your device? You can't SSH and you don't know the password.

The only way in without restoring or ability to SSH in is to remember your password. Even if you restored the phone then restored from back up, the password lock will come back. So you really don't have a choice.
