How do I change it so it's not alpine anymore?

If somebody gives me the method given last time I'm not trying it. Bricked my 1.1.4 iTouch. The method was to use an online password generator, then replace the txt from the generator into the master.passwrd file. It doesn't work.

Anybidy have a way that does work?

install mobileterminal from cydia

open it and type "passwd root {new password}"
without the {}
you might want to change it for mobile too "passwd mobile" etc

and it wont break your device.. i did it for myself
