Does iTunes 7.5 even recognize the 3G?... I know it would work on a 1G as I've done it before. But once you downgrade, you'll need to use a "tool" to get your phone to boot into normal mode since the baseband won't match. You will however, be able to make phone calls just as you would on 2.0. Have fun downgrading. BTW: MAKE SURE THE PHONE IS IN DFU WHEN YOU DOWNGRADE! If you try to do a regular restore or even recovery mode, you'll get errors 1604 and 1605. The error you want is 1015. Then it's safe to boot your iPhone in normal mode.
PS. If you're doing this on an iPod Touch, you shouldn't get any errors after the downgrade.
