Well basically, a LOT of themes I download, never have the icons for the Music and Photos... Its so annoying, because it ruins the whole theme... What I mean is, it changes all of the icons according to the theme, although doesn't change the Music or Photos icon... Can someone help me?!? How can I fix this???
This would be because most themes are for the iPhone, which does not have a Music app. Your best bet is to manually rename the iPod app to Music, or request the creator to make an icon for you.
As for the Photos icon not working, I'm not sure why that's happening.
If you have OpenSSH or Finder installed on your iPod you can go in and change the names of the icons from iPod.png to Music.png and Camera.png to Photos.png.
You can use winscp to pull the icons off your ipod and edit them with gimp. It is a free icon editor. You then place the edited icon in the folder for the theme it belongs to.
