    I jumped the gun and did the OTA before I heard I should use iTunes. Could I restore with iTunes and undo whatever the OTA affected?

    Yes, you can!
    Make an iTunes device backup first (just to be safe).

    The trouble with OTA isn't that it does something BAD that needs to be undone,
    but that it fails to do something GOOD, that you might need later.

    If you're using OTA'ed 6.0.x, just update to 6.1 with iTunes. No need to redo the 6.0.x.
    If you're on OTA'ed 6.1, restore to 6.1 with iTunes.

    Just to be safe the new build number for the update on 6.1 for iPhone 5 is 10B143 just incase apple try's anything fishy

    You could always download the .ipsw and hit option + restore from iTunes, select the IPSW and do it that way
