Why can't we delete music from our iDevices? And why is there no "recently added" section in the iPod.app? Ridiculous!!
My favorite tweaks:
afc2add
Airplane Toggle for SBSettings
AppLinks
Chronus
Cyntact
Daemon Tool
iFile - go ahead and activate it by purchasing a license
Mobile Terminal (NEW) v520-1
MyWy
OpenSSH
QuickReply for SMS
SBSettings
SnowCover4
Speed Intensifier
Speed Intensifier Addon
sysclean
untrackerd
WinterBoard
3G Unrestrictor
System and Clock font manually themed
Mojo/Classica3/Tetra icons with custom ones by me
Principium SD ported by me (not made)
Dock (NFR copy cat)
SBSettings theme - Gimme modded
Various UI mods by me
Android Froyo UI sounds
Activator set to go to multi-task iPod control when device is shaken on home screen.
Suggestions:
lockinfo or Notified+ (I don't like OpenNotifier its buggy)
4.1 Jailbroken with limera1n - should have used pwnage tool

You seem to forget that before the App Store there was Cydia. Before MultiTasking there was BackGrounder. Wallpaper. And so on and so on. Also they are supposed to be implementing Multiflow expose style multitasking into the next phone. I think the question is where would the millions and Apple be without the JB community.

here's a tip for people using ancient and buggy mobile terminal. if you have any ssh client app (i use iTerm) just ssh 127.0.0.1, log in as root, and you're all set. i got tired of trying to chase down a version of mobile terminal that was updated and not buggy. sad, but this is one case the app store offerings put cydia's to shame.

Springtomize, Barrel, Iconoclasm, etc. With all the great tweaks, who needs a theme?
