Apple is very controlling about the software that goes on their devices. The /reason/ we jailbreak our phones is so that we can do the things with them that we want, including install the software that we want. Apple specifically designed a much simpler/braindead set of tools for people to build applications with over the course of building their "SDK" and now carefully scrutinizes incoming programs to verify they don't do anything too awesome.
I /will/ say that, if you want to change their minds, you might poke them about how awesome Cycorder is. I bet if they get a few tens of thousands of requests for it they might change their mind about a few APIs that are keeping programs that record video from getting in (although TV out still wouldn't be allowed, for example, and I doubt they would even be swayed on that one).
In order to give us all better access to these types of applications from larger, more well funded groups, I am working on turning Cydia into a true competitor to the App Store, a place where you won't find just games and simple web utilities, but a place where you can buy amazing software that takes advantage of the true potential of your device: programs like Cycorder or Snapture, IntelliBoard, etc. Keep your eyes glued on Cydia for future updates on this front ;P.
