Auto restart app on iphone / ipad

I am using a number of iPads as interactive displays in a museum exhibition, but I've found that app crashes on occasion and reverts to the home screen. Once presented with the home screen, visitors feel conmpelled to start playing with the default apps. We've mounted the iPads in a security case which prevents access to the home and lock buttons which makes it difficult to get our app running again.

Ideally, I'd like to disable or remove the default apps and run my app so that it automatically respawns if it crashes. Can anybody suggest a way of doing this?

"remove the default apps" cant be done, if they the ipads are jailbroken you can use a tweak like AppLocket or Locktopus to lock all the apps you dont want them to access with a password.
