I'm currently on iOS 6.1 and have had Shine as my theme ever since the jailbreak for 6 was out. Now that there's a jailbreak for 7 I was considering updating and re-jailbreaking, but I don't know if the theme will continue to work. How do I find out? I don't ever want to lose this theme!

Since WB doesn't work on iOS 7, it's kind of hard to say if any theme is going to be compatible yet.Widget-Weather App Now Available! Also with MyLocation Support!
Check out the thread here - Widget-Weather
To install the Widget-Weather app, just go to Cydia and install. This will also remove MyLocation, as it is built in!
Want to protect your JailBreak! Add this repo http://cydia.myrepospace.com/iLEXiNFO/ & Install "iLEX R.A.T."
It will allow you to bring your phone back to a fresh jailbroken state!

No iOS 6 theme can support or work on iOS 7, because the UI, Springboard and all app theming is 100 % (!) different and completely new. The UI is not painted but partly coded an also uses vector graphics (!)
Beside all that the iWidgets app doesn't work and no Winterboard Widgets or Winterboard-Wallpapers work.
The only thing that might work are the icons. But even the icon size and the Wallpaper sizes (parallax-effect) on iOS 7 are different. Ornate Icon masks like on iOS6 are no longer possible.
It's not even possible to port any iOS 6 theme
