Hmmm, Appgrids are really set to how big you want the icons to be and the space between each one. You have to add the <key>IconWidth</key> and <key>IconHeight</key>
Then, you have to calculate the space from the edge of the screen (or where u want the edge to be) to the other end. Because if u pass even a couple pixels, the appgrid wobbles left and right when scrolling up and down (vice-versa also). Its all about exact measuring.
Like i wrote before, the iconmask what it does is, it tells the icon to be confined in that space whether it means stretching out to fit it, or shrinking.
As for stretching your icon in the /Icons folder, appgrid uses all the icons in the theme, even those in the /Icons Folder and the IconMask and IconOverlay.

I have my Iconmasks, /Icons and iconwidth/height all in the same dimensions (75x30). But, in the appgrid, only the icons without custom icons (ie, the ones not in the /Icons folder) are correctly sized. The custom icons are stretched to an unknown size, and then clipped to the iconheight/width
