SBSettings (drop-down menu anywhere for toggles to settings like wifi, data, bluetooth, location, etc.)
iFile (access device files on device)
OpenSSH (access device files from computer)
Forecast (lockscreen weather)
Cydelete (delete Cydia apps from SpringBoard)
IntelliscreenX (hard to describe, it's awesome)
Dreamboard (Another theming platform)
BadgeClear (clear annoying badges on SB)
NoSpot (turn off spotlight search, though springtomize will do this too)
WidgetTask (multitask bar in notification center)
...And so on.

SB settings works fine on iPad but isn't optimised for the larger screen , but it's still worth having definitely.
Activator is something you're sure to need as is CyDelete
Barrell works fine on iPad & is a nice touch & will impress your friends or if you don't have any, your dog will love it.
Definitely get ifile & mobile terminal you will need these..
Scrollingboard is a good one it's like infinidock & infinifolders all in one, plus you can put addons & widgets to your dock
Unlockfx let's you choose from a bunch of cool animations which work when you unlock your pad, another nice visual touch
Have a browse through Notificatiom Centre addons in cydia, the iPad NC is rather limited
Springtomize 2 for OS 5+ is surely the best all round personalisation package , I always start there on a newly jailbroken device, & there are tons of options there which will keep you busy for a while
