I just received an IPad2 and see apps that I can use to make me more productive although it requires me to jailbreak it. Does AT&T care if I jailbreak it? And also if something goes wrong can I restore to the OG version?

No AT&T does nothing. Some apps will not work in jailbroken devices though, but very few of them. And yes, if something goes wrong you can just restore to the original firmware.If my post was good, click the button in my post

To add to that, you can always restore. Though with some (most?) iPad2 and (all) iPad3 you cannot at the moment downgrade to previous firmwares. That is only useful if 1) the new firmware really sucks and you want the old one or 2) the current firmware is not jailbreakable and you want to downgrade to a previous version that is. Regardless of all of this, you can always restore to the current firmware.

AT&T doesn't care nor does Apple, the only thing they're concerned about is piracy. They won't bust in and arrest you or anything but Apple may void your warranty if they find out it's jailbroken. In the case of you ever having to send it to Apple, You can just do a restore through iTunes. It will erase all traces of the jailbreak unless you manage to screw the hardware up.
