Will my custom icons go away when syncing with iTunes?

I've been changing the icons of my apps and I like the result, but if I sync my ipad with iTunes, will it revert all the icons back to the original? I'm not using winterboard because it stretches out icons and I don't know a workaround. So, would it be a good idea to make a theme for winterboard with my icons so that if I ever re-jailbreak, I can just install my theme and they would all change? If so, is there a guide on how to do it without it stretching the icons?

Have you tried it before? Also, is there anyway to backup my iPad's jailbroken apps/settings so that if I ever jailbreak again I can just plug it in and get my stuff back?

Yes, we have tried it before. It won't delete custom icons.

There's an Cydia application that backs up your jailbroken stuff called AppBackup (not sure if I'm correct). Or the inconvenient way, SSH all your stuff to your computer.
