Default Change the DISPLAY name of apps
The old way of doing this, with the localization strings in Springboard.app don't work on the iPad (localization looks to be handled differently).

If you want to change the display name of an app, you need to edit the Info.plist of that app, for example if you added the MobileTimer.app to your iPad it will display as 'MobileTimer' on your springboard.

    Edit /Applications/MobileTimer.app/Info.plist
    to add the following string:

    <key>CFBundleDisplayName</key>
    <string>Clock</string>

and respring. Seems to work for all apps I've tried so far, but YMMV as always. Cheers!

You can try to do it with localization software such as https://poeditor.com/. It's free.
