Installing Apps Not in Installer.app

How do I install third party apps that aren't listed in installer.app? I remember in the early days before all this fancy automation I installed an FTP server through the shell in mac then I would just up the apps through that. Is there something I can install with installer that will let me FTP into the file structure?
