    Tried turning the phone off and back on while holding the volume up button.

    Oh crap. Can't you even put it in DFU mode ?
    Hold power button four seconds, keep pressing it and press home button simultaneously for another 8 seconds until the glowing apple has disappeared since about half a sec, then release POWER button only holding home burin down for a last 8-ish seconds.
    If screen stays black its in DFU mode.

    Can't your PC access your phone in DFU mode (iExplorer or equivalent) ?

    I could've checked here but my phone's jailbreak is in a tethered state plus the iMac's off (wife sleeps).

    So is your i5 showing on your PC ?

    Then in Safe mode, open Cydia and uninstall MobileSubstrate. Whatever causes the boot loop is in the tweaks in the uninstall queue.

    You told me you can boot up in safe mode (without mobile substrates running), didn't you ?

    It's alright. It's an international forum France here

    So once you're in DFU mode can you boot up in Safe Mode by holding the volume up button until the apple logo appears again ?

    Ps. : leave iTunes alone for the time being (quit the latter app).

    Ok. Press both power and home buttons together until the apple appears, then let go of both buttons and press the volume up button instead. Does your phone boot up then ? This should bring it into safe mode.
