I want to know how to restore my iPhone and have it update to firmware 5.1.1 instead of 6.0.

You can't restore to 5.1.1 except IOS 6.0.

I am in a similar situation, iPhone4s with ios5.0.0, already jailbroken.
If we can't update to 5.1.1, is there a way to wipe the phone clean without restoring? I don't have any blobs or anything for this phone, and restoring will force it to update to 6.0.
Suggestions are much appreciated.

You will have to manually remove all passwords, tweaks in Cydia, log out of iTunes account on your phone, sync in iTunes and un-check contacts, music etc then sync to remove info, remove all apps other then stock apps.
