i'm just curious here.... what is the importance and cause/effect of apple signing or not signing a version of firmware? what does that even mean? i mean.... can't i just acquire an old ipsw, and load up whatever firmware i want on whatever device i want with certain 3rd party tools? who cares if they don't sign it. screw em. my wife has an ip 3gs running 4.3.3 since it [that firmware update] came out and she hasnt updated. she just toggled for itunes to never ask her again. so what's the deal with this whole 'signing fw' thing? i just want to have a better personal understanding of WHY the JB devs said to upgrade to 5.0.1 before the window closes.... why was/is it so important?

The signature is a "security" measure and to keep you from going back to a jailbreakable firmware. Mainly the later one though. The signature files are called shsh blobs/files. Here's a link to explain more about them.
its also important to note that SHSH files are basically useless for ipad 2 and iphone 4s at this point, because apple changed the way shsh files work. so once apple stops signing 5.01 you will never be able to restore back to that iOS. this means you will lose your jailbreak/unlock (assuming they unlock the 4s). there needs to be a bootrom exploit discovered (like limera1n on a4 devices) for them to become useful. i would assume we will never get a bootrom exploit for a5 devices seeing as the ipad 2 has been around since march and we have 2 only 2 userland jailbreaks.
