Default Updating from 4.3 to 5.01 and Preserving the Baseband

so I have a mac, I followed the redsnow method and I have no luck, can I use snowbreeze on windows and and upload the custom IPSW and Download it on my mac later to then use that to restore? I dont care about the Jailbreak, I just need to restore to 5.0.1

You can just restore to OFW of 5.0.1 if your baseband is already Not Unlockable.

Then you want to restore to custom firmware to preserve this baseband.

You can't, redsn0w 0.9.9b8 has not included pwnage tools to build a cfw of 5.0.1. You need Snowbreeze 2.8b11 to build one and this is the only one available for cfw of 5.0.1

No, this is just cosmetic. You can still make calls and you should be getting more bars when you are outside or closer to cell towers.
