How should I update to iOS5 with jailbreak?

Okay here is my situation:
I had an iPod 4G with 4.2.1 jailbroken with some apps from **********. I synced everything and iTunes made a backup of my iPod. My home button broke so I am getting it exchanged for a new one under warranty. How should I proceed to have it in iOS 5?

Should I do this:

1) Setup iPod from backup.
2) Update to iOS5
3) Jailbreak + Cydia + Appsync + **********
4) Sync apps?

Will I have all my notes, contacts, calendars, etc from my backup and still be able to sync my old backuped apps to iOS5??
