Default iPhone will not restore after updating to iOS 5

Hi everyone, I really need help with this issue. I don't usually post on forums for these kinds of things but I'm desperate after searching for and trying so many different things, I've looked all over the place and tried everything I could find. Hopefully I just missed something and you guys can help me.

I updated my jailbroken iPhone 4 from 4.3.3 to iOS 5 yesterday using redsn0w 0.9.9b5 and it's "Custom IPSW" option. Put the phone in "Pwned DFU", option + restore in iTunes, chose the custom IPSW and everything finished fine.

After it was done, I clicked restore from backup and chose the backup I did before updating but I noticed that it wasn't really restoring correctly. My pictures weren't showing up, it was installing apps that I didn't have on the backup I was using, contacts were gone. I thought something was wrong and instead of waiting for the 5000+ songs to finish syncing, I stopped the backup restore. After I did that, the restore button grayed out and the only time I can do anything with the restore button is going into DFU. Right clicking the device doesn't show restore from backup either.

The first thing I tried was updating over again but this time I tried starting it up as a new phone to then restore from a backup later. That didn't work. Then I tried rebooting a couple of times and I got it to start up once without restore being grayed out but when I right clicked the device it still didn't show restore from back up. When I tried backing up the device again, restore from back up showed up but only with that new back up. In preferences I could see that my old back ups were there but for some reason iTunes wasn't recognizing them.

Now when I update again to try to get to the 2 option "Start up as new phone, restore from backup" screen, it doesn't show up. It just automatically starts up as a new phone even when I click restore from backup on the phone itself. I've tried reinstalling iTunes, I've tried deleting "iTunes_Control" from the phone and plenty of other things.

I know it's probably a lot to ask of anyone to read all of this and help me but please give me any suggestions you can think of. I guess the TL;DR version would be:

How do I get to the "Start up as new phone or Restore from backup" screen you get after updating since I update and it just automatically starts up as a new phone?

After you asked, I used redsn0w to deactivate and then hacktivated using SAM and it worked! My iPhone is restoring right now. Thank you for putting me on the right track!
Edit: Tethered jailbreak made it kind of annoying to restore but it worked! Fixed Push Notifications too!
