Right now, what you need to do is wait.
There is no jailbreak for iOS > 4.3.3 on the iPad 2 yet.

If you upgrade now, (or tomorrow when 5.0 is released)
you'll be stuck for a long time until the new JB comes out.
(It could be weeks, or months. Hopefully not too long. We don't know.)

    Edit:
Unless you have iPad 2/WiFi. If so, you can still probably update to 5.0, and then downgrade again to 4.3.3. If you've got an iPad 2/3G you'll need to wait, and you almost definitely won't be able to go back to 4.3.3 again.

But isn't there like something you do to keep your firmware backed up and stuff if you want to ever go back... Like "SHSH" and "tinyUmbrella" or something like that?

If you wifi version and 4.3.3 shsh blob , then you can downgrade back whenever you want. The difference is the Baseband check in 3G or CDMA model. Yours has no bb check as there isn't any bb
