JB, Backup / Restores Queries

guys currently I am on JB'ed 4.3.3 [8J2] firmware. Now I want to update to either 4.3.5 or iOS 5 [or both to try] .

Firstly I need to back up following things :
-apps, app data [highscores, settings etc], sms, notes, calender, contacts etc
-all cydia apps installed
-I also need separate back up of SMS
-separate back up of apps [even though already iTunes have them ]

Secondly, I should be able to restore the back up to whichever fw I plan to try. How ?

Just wondering why you'd want to do that. 4.3.5 is not jailbreakable and iOS 5 is buggy especially with jailbreak. You're probably safer to stay on 4.3.3 then upgrade to iOS 5 when it is officially released and an official jailbreak is released for it.
