JB 4.3.4 tethered - how to create new phone backup?

I just jailbroke my iphone 4 with redsnow and its a tethered JB. I tried to sync after and most of the apps won't work. The previous image was not a tethered JB.

Itunes seems to reset the phone before it syncs the apps so thats probably why its screwing up (since a tethered boot is required to operate jailbroken apps).

So now I re-downloaded most of the apps I wanted and just want to start a fresh backup image. How can i safely delete the old phone backups on my computer and save a new backup file?

iTunes > edit> preference> devices> delete backups .
