Losing memory total capacity after every jailbreak.....

I own an 8gb Iphone 3g.

Stock iphone I had about 7.2 or 7.3gb. I JB to 3.1.3 and had 7.1gb total capacity. I went from 3.1.3 to 4.1 and got 6.9gb total capacity. Now i went from 4.1 to 4.2.1 and i only have 6.8gb total capacity...what..the...hell...is going on?

Btw to jb im using redsn0w to enter pwned DFU then use itunes to restore using custom firmware, so its virtually a clean slate everytime and shouldn't be leaving any crap in there. WHats going on then?

cause firmware are bigger in size.
ip4 4.3.1 is 620mb
iphone 1st gen. is 280mb etc....
