Help Removing Info Off iPhone 3G While Retaining Jailbreak

Hopefully this is an appropriate place for this question, if not feel free to move me.

I have an iPhone 3G which is unlocked and jailbroken on 4.0.1 which I want to sell. I need to get all my personal stuff off this phone before I sell it but I don't want to disturb the JB.

Can someone please tell me how to do this or point me to a tutorial that shows me how I can restore the phone and keep the JB?

Create a new user in your operating system (Mac/windows) then open iTunes , connect iPhone and sync...it will tel, u that it will delete all apps and music, click ok,,, on the iPhone info screen go to contacts and sync and it will erase all contacts as well

Is there an easy way to delete my contacts or do I have to go into each one and clear all the fields?
