Put it in DFU mode, and read the "CPID" field in the USB device descriptor.

8720 is the second-generation iPod touch.
8922 is the third-generation iPod touch.
8930 is the fourth-generation iPod touch.

Also, TinyUmbrella can tell you what model of device it is, just by connecting it via USB and running TU.

It's the same button combination... as long as it's plugged into a computer and you do the button-pushes right, it'll go into DFU if the hardware isn't toast.

EDIT: Can't believe I didn't think of this sooner: the model number and serial numbers will tell you (specifically the last three digits of the serial number). Also:

The 2G is the only model with MB... model numbers (though there are some MCs). It also is the only iPod that does NOT have Voice Control.

The 4G has a 12-digit serial number instead of an 11-digit one. It also is the only iPod to have a camera (two in fact).

The 3G will be any iPod that doesn't fulfill either of the above requirements (e.g., has Voice Control but no cameras).
