Problems/questions with a messed up iPhone 4 (in serious detail)

After 2 sleepless nights of crazy research unfortunately not having found a solution I'm forced to explain my situation and cry for help
I'll be providing as much detail as possible so be prepared for a long post but I hope people will have the patience to read through the whole thing.
I got an iPhone 4 just 3 days ago and have been struggling with it ever since.. I'm in United Arab Emirates and as some of you might now the iPhone 4s in this country are quite molested by the operators before they even hit the shelves..
First brief info about my phone: (all below are the out-of-the-box values, I didn't even get them to do the activation at the store to at least prevent them from getting their dirty hands on my iPhone any further)

Modem Firmware: 03.10.01
Being completely new to the iPhone family, I was quite shocked as it's completely different(in terms of operation and the way it runs) than what I expected and what I was used to.
First thing I did was to jailbreak with GreenPoison(took me about 2 hours of reading before deciding on the software). No problems whatsoever, it was running like a charm. Except a battery drain issue, on an average usage(including some Wi-Fi and 3G data usage), in 16 hours I deplete around 65% of the battery. Don't know if this is normal or is something wrong but even my old Nokia N97 had way better battery performance so it feels a bit weird? Some comments on this would be highly appreciated, is something wrong or does the iPhone battery really last only one day?
Knowing the firmware is molested, I wanted to restore the phone to an unmolested, clean state. So I downloaded the 4.2.1 firmware from Apple's site (through one of the many websites that provide direct links) and SnowBreeze to create my custom firmware and restore using iTunes 10.2.1 . First I created the firmware with SnowBreeze without any problems, then put the phone in Recovery(or DFU but in the way SnowBreeze explains itself) and iTunes recognized the device in recovery mode. So I continued with the restore choosing my custom firmware. Everything was doing fine until I got my error during iTunes process of verifying the firmware. All of a sudden I got an error 3194. Trying to sort out this error I did lots of reading and bumped into the 3014, 1601 and 1602 errors as well. I've tried (I guess) every possible solution I found online to bring my phone back to life but all have miserably failed. So I launched greenpoison again and jailbreaked my phone once more to finally see it back and running.
Having some relief finally I decided to do more reading (especially on this site) and decided to check out the TinyUmbrella method. I tried saving my SHSHs and the log report is below;

Now what I'm getting at this point is, by the time I purchased my phone it was already too late for me save my SHSHs for 4.2.1 and restore it to a clean state properly and now the only option I have is to restore to 4.3 if I want a clean system (which doesn't have untethered jailbreak yet if I'm not mistaken?)..
When I connect my iPhone to my computer iTunes pops up asking me if I would like to update to 4.3 which is a clear "NO" and I'm kind of stuck here not knowing what to do.. I think I currently have no way of getting my phone even back to the out-of-the box state leaving aside restoring to a clean unmolested 4.2.1 firmware??
