If you didn't restore from back up after going to 4.2.1, you might consider trying a different 4.2.1 ipsw downloaded elsewhere than where you got this current one. Maybe that will change the outcome.

Yes. After restoring it will give you a list in iTunes to choose from when selecting "restore from back up"

It will have a list of backups you saved for you to choose from. So you can see the files that you have available to back up from.
