Grrrr, I tried to do it but failed.
First off I got a Error 3194, I checked out my hosts file and removed some entries relating to gs.apple....
I redid the whole process and this time I got a 3014 error. -.-"
Help please, I need this phone working.

Ok now I'm getting pissed off.
I tried using redsn0w and got nowhere.
It just sits there at uploading ramdisk, I have tried twice to get this bs working!

If you're still on your 3.1.2 install, that's to be expected--current redsn0ws (0.9.6+) are built for 4.x firmwares, especially if you pointed redsn0w to a 4.x firmware to start.
You have to restore at this point, pretty much. What firmware version were you restoring to when you were receiving those 3194/3014 errors?

Same as I did with Sn0wbreeze, iOS v4.1.2
Yes as I stated originally my current iOS on the phone is v3.1.2.
I'm obviously missing something here, do I have to restore to a genuine iOS v4.1.2 using iTunes then do something or what?

Read the bottom bold part first.
The biggest issue is the OS version is a year+ out of date now. Most, if not all, of the tools and software being made aren't being made for that build.
Since it sounds like your installation of iOS on your device is screwed, you'll have to restore. You can do that with the sn0wbreeze firmware you made, or stock (STRONGLY STRONGLY RECOMMEND THE SN0WBREEZE ONE!).
Use that same redsn0w to enter the Pwned DFU mode, and use iTunes to restore.
To answer your question about saving stuff, you can use a backup in iTunes and restore from it after you've completed the sn0wbreeze firmware restore on your phone (not exactly recommended), or if you have SSH access into your phone, you can manually backup the files and paste them over after the update.

I have SSH access to the iPhone and that is how I tried to fix Cydia in the first place.
It wouldn't be a bad idea to upgrade the iOS though as it is rather out of date.

Sn0wbreeze worked fine for me going from 3.1.3 to 4x FW I can't remember specifically which I went to as it was a while ago!
I'm not sure what's causing your issue, and I'm a little lost for tools and advice to help you out! Sn0wbreeze and Redsn0w for that matter are quite self explanatory!!
Don't update to a stock FW as you will loose the ability to unlock, if you have saved your SHSH blobs then potentially you could update to 4.1 with the aid of TinyUmbrella, i believe 4.1 is compatible with the current version of Ultrasn0w but id like someone to confirm this before you proceed!!!
