Thank you to those who helped. After 10+ web sites 200 posts + forum I have managed to jailbreak my phone. The guides on the web are good but happen to miss out vital information and some don't have the correct links. But it's done and anyone who is struggling to make a tethered jail break may pm me and I should be able to direct you.

Help me! I have a 3GS new bootrom trying to jailbreak. Without having to plug into my pc everytime it dies or needs to reboot. Is it possible?!

No.
I did say tethered. 4.2.1 Is not untethered yet (packaged up - just waiting on that release) But easy solution don't let your phone die. Shouldnt need rebooting that often anyways.
