I don't want ones to disappear even though they're synced with my email..

best way to get all the ones i have on my iphone NOW to copy back over after I update and jailbreak? PLEASE let me know!

Backup in iTunes, sync them with PC, and sync with gmail/mobileme/etc... then you're saving them in three places.

But usually syncing with gmail et al is enough.

If you backup and update then all your info will be saved. If you decide to downgrade and restore to a previous firmware then more then likely youll have to start as a new device.

2nd the gmail sync idea. BTW there is a way to setup gmail on your phone as an exchange account, this will allow contacts to automatically sync to your phone. Coming from android I loved the gmail contact sync feature... any time I changed to a different phone my contacts will auto-sync. I even set it up to pull pictures from facebook.

Common sense will tell you , a restore thru itunes wipes out clean like a new iphone. However, you can always sync back contacts thru itunes from your Microsoft outlook, yahoo address book, google contacts, windows contacts.
You can look under info in itunes : drop menu, you can syc your contacts first with all the four categories and then sync back later.

How would I set this up?
Would I would LOVE to do, is use my NEW gmail account that doesn't have any contacts on it, and sync the ones off my iPhone to that and only have those in that email address, to then sync to my iphone again after my new jb.

Here is the link I followed. Just make sure to create a folder on gmail called "My contacts" or something as you do not want it to sync ALL contacts.

Set Up Your Apple Device for Google Sync : Mail, Calendar, & Contacts - Google Mobile Help

More information is available on google.
