New iPhone 4 from Apple Store with 4.1 FW and 2.10.04 BB - What do?
I want to Jailbreak untethered if possible. Since the phone is brand new, there are no other SHSH except 4.2.1 found on TinyUmbrella or Cydia. Sound right?
Well? What do?

You cant jailbreak 4.2.1 untethered yet. Redsnow 0.9.6rc8 is your only choice right now for that and it is tethered.

Thanks for the quick response. This phone replaces a previous iPhone 4 on 4.2.1 BB 3.10.01 that died. When I connect to iTunes, do I sync from back up or start as a new device? Will syncing from back up also update me to 4.2.1 BB 3.10.01? If so, do not want!
If new, how do I get my contacts and email settings back or do I have to re-enter them?

Syncing from backup wont update it. You may not be able to sync from backup if your last backup was from a 4.2.1 phone though. Just set up as new and jailbreak with limera1n/greenpoison/redsnow 0.9.6rc8. All are untethered on 4.1.

You're right. When I connected it to iTunes, I don't have any option but to register my phone - no option to restore as I was previously on 4.2.1
Guess I will have to somehow manually go back and secure all of my contact info. The rest is replaceable.

You can try looking for an iPhone backup extractor. Google is your friend

Interesting. I'm done syncing whatever contacts are stored on my macbook and also movies and music. I was promted to restore from my previous back ups -- there were like 6 of them -- by I went ahead and opted to make this a new device.

Yeah, iTunes will prompt you to restore from a previous backup but it will error out since the firmware was higher on your previous device then the one on your current device. I had that happen to me once

OK. All backed up and ready to JB. Fortunately, my MacBook backed up all of my contact info, so all I really lost were a handful of settings that are easily recoverable. The only SHSH that TinyUmbrella is reporting to save is 4.2.1 and I'm currently on 4.1 with BB 2.10.04 and I've saved it.
DevBlog refers to PwnageTool 4.1.2 -- Is this the best scenario to keep all future and retro options open or should I consider limera1n, greenpoison or redsn0w?

Unfortunately its too late to save the shsh for previous firmwares which means you would not be able to restore to any firmware other then 4.2.1. I would seriously recommend staying on 4.1 firmware as any jb program you use will be untethered.
If you upgrade to 4.2.1 it will be tethered for the time being since the only untether jb for this requires a Mac, 4.2b3 shsh blobs and the 4.2b3 firmware.

Thanks. I'm definitely staying put at 4.1. What's the preferred method of jailbreak for me? Also, since I don't have shsh for 4.1, if something goes wrong am I stuck with going up to 4.2.1 or can I get back to 4.1? Thanks in advance, I'm sure these sound like pretty basic questions.

From my understanding if something were to go wrong and you have to restore, the only firmware you could restore to would be 4.2.1 since you dont have the 4.1 shsh blobs saved.
Any jb method will pretty much work for you since you are at 4.1.
Limera1n or Greenpois0n seem to be the jailbreaks that are the easiest to perform on 4.1.
